Your mission:

To strengthen our kitchen team, we are looking for a passionate Chef de Partie – Gardemanger (f/m/d) who delivers top quality to the plate with passion, precision, and a flair for cold culinary artistry.

  • Section Ownership: You lead the gardemanger section independently, preparing exquisite cold starters, salads, creative carpaccios, tartares, terrines, and sophisticated canapés to the highest standard (16 GaultMillau points).
  • Flawless Mise en Place: You organise your section with structure, precision, and a sharp eye for detail – from handling delicate raw produce and fresh herbs through to the final, immaculate presentation at the pass during service.
  • Creative Input: You actively contribute your own ideas for seasonal cold dishes, plating concepts, and innovative culinary techniques to the kitchen brigade.
  • Quality & Efficiency: You ensure a smooth service flow at the cold station and maintain exemplary hygiene, cold-chain, and HACCP standards at all times.
  • Team Spirit & Mentorship: You provide inspiring leadership to Commis de Cuisine and apprentices on your section, fostering a respectful and encouraging work environment.


This is you:

  • Solid Foundation: Completed professional chef training and several years of experience in fine dining or luxury gastronomy, ideally with specific exposure to the gardemanger station.
  • Passion for Produce: Deep knowledge of fresh raw ingredients, cold preparation techniques, and seasoning, paired with a strong commitment to premium quality and aesthetics.
  • Precision under Pressure: A calm demeanor, composure, and sharp focus, even during peak service hours when timing is critical.
  • Personality: High personal standards of quality, a true team-player mindset, resilience, and a genuine passion for high-end gastronomy.
  • Languages: Must-Have: Italian. Ideally, good knowledge of English or German.
